  • Go to Edit -> Preferences -> Advanced
  • Uncheck "Allow client / OS information to be sent" as well as "Allow local system time information to be sent"
  • Make a new account

Expectation (to me) is that the chosen settings will be applied to the new account, too. But that is not what happens and your newly made account will leak what you thought you disabled.

Cleanest way to fix is probably to make gajim respect the chosen settings for all current and future accounts. A simpler way might be to just make "no leaks" be the default in the first place. A more complex way would be to have it be decided by account, in the account menu, instead (still with leakless by default, rather).
